I'm all about a good burger, but sometimes I want something a little lighter. That’s where these tilapia fish burgers come in! They’re packed with flavor, easy to make, and a great way to get everyone on board with eating more fish—without feeling like you’re missing out on a burger.

Burgers are something I can almost always get everyone to agree on for dinner. Fish not so much. So a fish burger is a happy compromise that usually works for everyone. I decided to use tilapia for this burger since it's inexpensive and I don't feel like I am "wasting" it on a burger recipe.

However another sturdy white fish or salmon would work great as well depending on what you like best. Topped with some fresh avocado, tomatoes, and sprouts - it's a delicious, lighter burger you'll love.

Since tilapia can be on the bland side, it's important to add tons of flavor to your burgers. In this case, I used a combination of garlic, Dijon mustard, paprika, onion powder, basil, salt, and pepper to kick up the flavors.

However, you could really spice them up any way you want. I have made blackened fish burgers with chili powder, cumin, paprika, and garlic powder and simple lemon pepper burgers with lemon zest, Parmesan, and tons of black pepper.

Think of tilapia like you would ground turkey or chicken - it's kind of a blank canvas you can spice up any way you like.

Ingredients for tilapia fish burgers include raw tilapia fillets, eggs, tomatoes, cucumber, avocado, bread crumbs, spices, mustard, garlic, and sesame seed buns.

What You Need to Make Tilapia Burgers

Making tilapia burgers from scratch is quick and easy! Here’s what you’ll need:

  • Tilapia fillets: Mild and affordable, but you can swap in another white fish like snapper, cod, or haddock. Or use salmon, like in these delicious salmon burgers. 
  • Breadcrumbs: Helps bind everything together for a firm, juicy burger. Use regular or Panko breadcrumbs, and dredge the finished patty in breadcrumbs for an extra crispy burger. 
  • Egg: Adds structure and keeps the patties from falling apart.
  • Garlic and onion powder: Boosts the flavor without overpowering the fish. You could also use fresh here, but it will have a much stronger flavor.
  • Dijon mustard: Adds a little tang and depth. It's so good! Don't skip the mustard. 
  • Paprika and Dried Basil: This adds a hint of smokiness and herb flavors. Swap in any seasonings or herbs you like.

Add Some Sauce

There are so many ways to top these easy fish burgers. Here are some favorites: 

  • Creamy chipotle sauce: Add some spice with this creamy chipotle sauce made with greek yogurt. 
  • Simple yogurt sauce: Mix Greek yogurt, garlic, lemon juice, and fresh herbs for a light, creamy topping.
  • Lightened-up tartar sauce: Combine yogurt, low-fat mayo, and relish for a healthier twist.

How to Make This Tilapia Fish Burger Recipe

These burgers come together in no time! Here’s a quick rundown:

Chop the tilapia fillets and pulse them in a food processor until finely chopped.

Pro tip: Don’t overprocess the fish. You want it finely chopped, not turned into a paste!

Raw tilapia fillets are placed in a food processor, then mixed with breadcrumbs, spices, mustard, and herbs in a bowl to prepare the fish burger mixture.

Mix the fish with breadcrumbs, egg, Dijon mustard, and seasonings. Form into patties and let them chill in the fridge for 10 minutes.

Pro tip: Chilling helps the patties firm up so they don’t fall apart when cooking. For a crispy exterior, dredge the patties in breadcrumbs before frying. 

Heat a little olive oil in a pan and cook each patty for 3-4 minutes per side until golden brown.

Absolutely! While tilapia is a budget-friendly and mild option, you can easily swap in salmon, cod, or even shrimp (like in these shrimp burgers) to mix things up.

Yes! Instead of forming patties, dip whole fillets in an egg wash, coat with seasoned panko breadcrumbs, and either pan-fry or bake at 400°F for 8-10 minutes until crispy.

What Seasonings Can I Use?

Tilapia is like a blank canvas, so you can get creative with the flavors! Try:

  • Blackened seasoning: Chili powder, cumin, paprika, and garlic for a spicy kick.
  • Lemon-pepper: Lemon zest, black pepper, and a touch of Parmesan.
  • Smoky & bold: Smoked paprika, chipotle powder, and cayenne.
  • Old Bay: The best seafood seasoning out there is Old Bay in my opinion. When I make old bay fish burgers, I like to cook them in butter - so good!

You can keep it simple with classic toppings or get creative! Some favorites:

  • Sliced avocado & fresh tomatoes
  • Crisp lettuce or sprouts
  • Pickled onions or jalapeños for a tangy crunch
  • Sriracha or hot sauce for some heat
  • A squeeze of lime juice
  • Homemade tartar sauce or yogurt dressing

Can I Make These Burgers in Advance?

Yes! You can prep the patties ahead of time and store them in the fridge for up to 24 hours before cooking.

You can also freeze uncooked patties for quick meals later. Just thaw in the fridge before cooking.

Pulse the fish in a food processor until just chopped.

Combine the fish with the breadcrumbs, egg, egg white, mustard, garlic, salt, pepper, paprika, basil, and onion powder.

Made this recipe, but instead of cooking on the stove as patties for a sandwich, I cooked them in my donut hole maker... essentially made tilapia meatballs. Since I didn't make it into a sandwich, I didn't need the other ingredients, but I otherwise made the fish cake recipe as described. Received several compliments from family that they liked the flavor, and I was asked to make them again. Thank you for sharing the recipe with us.

I tried this recipe with some leftover tilapia and enjoyed every bite at dinner. I didn’t have Panko breadcrumb so I replaced it with almond flour and it came out delicious.

This is the first time I've ever chopped fish in a food processor. It makes sense but never consider it before. This dish is de-lic-ious! It is better than any restaurant fish burger and so full of flavor and filling that I couldn't even eat it all at one go. This is one of our favorites!
